Potato Salad

Ingredients:

・Potatoes 2 pieces (220g)
・Onion 1/4 piece (47g)
・Carrot 1/4 piece (45g)
・Cucumber 1/4 piece (25g)
・Ham 2 slices (30g)
・Boiled eggs 2 pieces (100g)
・Salt a pinch
・Pepper a pinch
・Kewpie Mayonnaise 5 tbsp + for garnish

How to Make:

  1. Wash the potatoes, leaving them wet. Wrap them in a dry paper towel, then loosely wrap them in plastic wrap. Microwave at 600W for about 5 minutes and 30 seconds. Peel the skin and mash the potatoes with a fork while hot in a bowl.
  2. Thinly slice the onion. Peel and cut the carrot into quarter slices. Place both in a heatproof container, cover loosely with plastic wrap, and microwave at 600W for about 1 minute and 30 seconds.
  3. Slice the cucumber into thin rounds and cut the ham into thin strips.
  4. Add the cooked onion, carrot, cucumber, and ham to the mashed potatoes. Mix well with mayonnaise and season with salt and pepper to taste.
  5. Serve the potato salad on a plate, top with quartered boiled eggs, and drizzle with additional mayonnaise for garnish.
