・Kewpie Mayonnaise |
5 tbsp + for garnish |
How to Make:
- Wash the potatoes, leaving them wet. Wrap them in a dry paper towel, then loosely wrap them in plastic wrap. Microwave at 600W for about 5 minutes and 30 seconds. Peel the skin and mash the potatoes with a fork while hot in a bowl.
- Thinly slice the onion. Peel and cut the carrot into quarter slices. Place both in a heatproof container, cover loosely with plastic wrap, and microwave at 600W for about 1 minute and 30 seconds.
- Slice the cucumber into thin rounds and cut the ham into thin strips.
- Add the cooked onion, carrot, cucumber, and ham to the mashed potatoes. Mix well with mayonnaise and season with salt and pepper to taste.
- Serve the potato salad on a plate, top with quartered boiled eggs, and drizzle with additional mayonnaise for garnish.
